Southern Turnip Greens
 

2 lb. turnip greens
1/4 lb. salt pork, sliced
2 cups water
1 teaspoon sugar, optional

Wash greens thoroughly and drain well. Cut off and discard tough stems and discolored leaves from greens. Rinse and dry salt pork. Cook salt pork over medium heat until crisp and brown. Place turnip greens in a large pot, cover with water, and bring to a boil.  Add pork drippings, reduce heat, cover, and simmer until greens are tender. Season with salt and pepper to taste. Serve with cornbread.
