Old-fashioned Tea Cakes
Yield: 10 dozen

Preheat Oven: 400° 

3  2/3 cups cake flour, sifted
2  1/2 tsp. baking powder
    1/2 tsp. salt
    2/3 cup butter
1  1/2 cups sugar
2  eggs
1 tsp. vanilla extract or (1/4 tsp. vanilla and 3/4 tsp. almond extract)
4 tsp. milk

Mix together cake flour and baking powder. Add salt. Sift again. Cream butter thoroughly; add sugar gradually, creaming well. Add eggs, one at a time, beating thoroughly after each addition. Add vanilla extract, then add flour alternately with milk. Blend. Chill dough. Roll 1/8-inch thick. Cut with a floured, 2 1/4-inch scalloped cutter and sprinkle with white sugar. Bake on a greased baking sheet in hot oven (400°) for 9 minutes.

For Christmas, sprinkle with red or green sugar crystals instead of white sugar.
