Spinach Cheese Bake
A good side dish

Oven: 350°   25 minutes

1 pkg. (8.5 oz) corn muffin mix
2 eggs, beaten
1 carton (8 oz) sour cream
1 can (10.5 oz) French onion soup, undiluted
1 pkg. (10 oz) frozen chopped spinach, thawed and drained
1 stick margarine, melted
1 cup Cheddar cheese, shredded

Combine first 6 ingredients; stir until blended. 
Spoon mixture into a greased 9"x 13"x 2" baking dish. 

Bake at 350 degrees for 25 minutes; 
top with cheese and bake an additional 5 minutes.
