Fruit Salad With Banana Dressing
Yield: 8-12 servings

Salad:
2  (3 oz.) boxes orange or lemon-flavored gelatin
2  cups boiling water
1  (28 oz.) can pineapple chunks
1  (20 oz.) can Queen Anne cherries
3  large or 4 small grapefruit, sectioned
Juice from drained grapefruit

Dressing:
3 large bananas
1 (3 oz.) package cream cheese, softened
Lemon juice to taste
1/2 pint whipping cream, creamed
 

Dissolve gelatin in  2 cups boiling water. Drain pineapple chunks and cherries, reserving liquid. Add grapefruit juice and water to measure 2 cups liquid. Stir into gelatin. Arrange fruit in a 2-quart oblong dish. Pour gelatin over fruit, congeal.

Dressing: Mash bananas and mix with cream cheese. Add lemon juice and whipped cream. Mix well.

To serve: cut salad into squares and top with dressing.
