Apples ala Creme'
    Like Apple Pie ala Mode ... but better for you!
    14 Minutes to Prepare and Cook
     

    Number of Servings: 4

    2 apples (I used Fuji)
    2 reduced fat Graham Crackers (1 serving)
    1 box instant Sugar-free Fat-free Vanilla Pudding
    2 cups skim milk
    1 packet Splenda
    Dash of Cinnamon
    Spray Margarine (optional) 
     

    Directions
    Core and chop apples. Place in a microwave safe bowl and sprinkle with cinnamon and 1 packet of Splenda (or a spoonful of sugar if you avoid Splenda). Add a tablespoon of water or fruit juice. Cover tightly with plastic wrap. Microwave for approx. 3 minutes. Allow to sit covered while you prepare the rest of the dish.

    Prepare the pudding per package directions and refrigerate while you go to the next step.

    Break each graham cracker in half and break each half into a separate bowl (one of 4 small dessert bowls or custard cups). Leave graham crackers in big pieces not fine crumbles. Spray with spray margarine if you wish ... microwave 1 minute.

    Top each graham cracker with 1/4 of the diced apples. 
    Top each dish with 1/2 cup of the pudding. Garnish with a tiny dash of cinnamon if you wish. Serve immediately.

    ** This prep makes a nice mix of hot/cold ... much like Apple pie topped with ice cream. But if you don't like that contrast, refrigerate the steamed apples prior to assembling the dish.
