Watermelon Feta & Red Onion Salad

An unexpected but refreshing combination of flavors!
15 Minutes to Prepare

1/2 of a large Watermelon
1 Red Onion
4 oz. Reduced Fat Feta Cheese
2 tbsp Balsamic Vinegar (or Red Wine Vinegar)
1 Lime - juiced
Fresh mint, parsley, cilantro or basil

Directions
Cut red onion in half and slice thinly. Place in bowl with lime juice and vinegar. Toss to separate onion pieces and coat in dressing.

Cut watermelon into bite size pieces or use a melon baller. (I usually use half the water melon to leave plain and slice for those who aren't adventurous enough to try the salad.)

Toss the watermelon pieces, crumbled feta, onions and dressing to combine. Serve in a pretty bowl or in the hollowed out watermelon rind.

Sprinkle with freshly chopped herbs to suit your taste and/or freshly ground black pepper.
